Pig-Chicka-Cow-Cow is the reining, and two-time back-to-back, FBA Team of the Year, with a total of 21 Grand Championships and 12 Reserve Grands.
Sweet Smoke Q is 2 time FBA Team of the Year winner and a 4 time FBA Team of the Year runner-up, with a total of 30 Grand Championships and 30 Reserve Grands.
Both Jim and Lee will be teaching each category separately revealing techniques and flavor profiles used to win 93 Grands and Reserves cooking chicken, ribs, pork, & brisket in a competition timeline. We will follow a competition time line and even have it judged by a panel of certified judges giving their input.
We will highlight the following areas of cooking competition BBQ:
Meat Selection – Trimming – Injections – Marinades – Rubs – Sauces – Cooking Temperatures – FBA & KCBS Box Building
This class will feature cooking on Drum Smokers and Pellet Smokers
All participants will receive a goody bag with products from our gracious sponsors, Tee Shirts, snacks and refreshments including the almost famous “Pink Drink”. Saturday evening dinner and Sunday morning breakfast.
Class begins Saturday at 1 pm and ends at 8 pm, Sunday 6 am and finishes up at 2:30 pm
