Going Yard BBQ Competition Class

This class will present flavor profiles and techniques that it takes to win at competitive BBQ. Our class will cover trimming, seasoning, cooking and presentation of Chicken, Ribs, Pork, and Brisket for competition in the Florida BBQ Association (FBA) and the Kansas City BBQ Society (KCBS).  Going Yard will show you the techniques we use to produce quality BBQ for competition in each of these sanctioned type contests.  You will see firsthand the actual process, seasonings, injections, sauces, and box building our team uses.  We will cook to the timeline on Sunday, so you get the flavor of what happens at one of these contests.

Donkey’s Bar and Grill will have refreshments for sale during the class.  Class will start at 12:30 pm on Saturday and finish by 6:30 pm.  Class resumes at 6:00 am on Sunday to go through the competition cook process.
