  Jack's Old South Cooking School will be held at my home in Unadilla, Georgia. There will be a meet and greet dinner on Friday at night, and the class starts at 9:00 am on Saturday, with Whole Hog. We'll then move on to beef and pork ribs, chicken, beef brisket, pork butts and whole pork shoulder.

  The class will end on Sunday, at 3:00 pm. My school is for the novice, the enthusiast, and the trained chef, as well as for the BBQ competitor. The recipes are the same. The difference is who you'll be feeding.

  Whether you're serving BBQ judges, customers, or just friends and family, you'll elevate your BBQ game at my class. So, come over to my house and let's cook a little Q! See you there!

  The new judge seminar will take place at Apalachicola on Thursday, January 22nd 2026 at 5:30 PM at the FBA competition venue.  Keith Harris, a Master Judge with over 80 contests, will be instructing the class.

  We are initially opening 30 slots in the signup sheet for the class. If possible we will open more slots as we get closer to the event. Your name may move up in the slot positions if others students above you on the list cancel and remove their names. You can check the signup list at any time by going back to the seminar registration link via the Event Calendar.

  The cost for the Judge’s Seminar is $75.

  Certified BBQ Judges must be a member of FBA and their membership must be current in order to judge an FBA sanctioned contest.

  Individual membership is $50 and family membership is $75 and is not included in the seminar fee. 

  Current FBA Members need only to pay the cost of $75 for the seminar unless you need to renew your membership.

  Students need to download and read the Judges Handbook from the FBA website prior to the class. The Handbook can be accessed here:
